Pumpkin Cookies

Ingredients

Cookies

  • 1 cup unsalted butter
  • 1 cup sugar
  • 1 cup cooked pureed pumpkin (fresh or canned)
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups unbleached flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg

Icing

  • 2 cups confectioners’ sugar
  • ¼ cup softened butter
  • 1 teaspoon vanilla
  • 3 teaspoons whipping cream

Directions

  1. Use a mixer to cream together the butter and sugar.
  2. Add pumpkin, egg and vanilla and mix until incorporated.
  3. Finally, beat in the flour, baking powder, baking soda, salt, cinnamon and nutmeg until smooth.
  4. Drop teaspoonfuls of batter on parchment lined baking sheets - bake for 10-12 minutes at 350°.
  5. While cookies cool, cream confectioners’ sugar and butter until blended. Add vanilla and whipping cream.
  6. Spread icing on cooled cookies.
