½ cup good quality margarita mix, such as Tres Agaves Organic Mix
¼ cup sugar
Edible gold leaf
Combine juice, margarita mix and sugar and whisk until sugar is incorporated.
Place in a 8” x 8” square glass dish. Or something comparable.
Place in freezer for 1½ hours. Remove from freezer. Using the tines of a fork rake the mixture which has begun to freeze. Place the mixture back in the freezer for 30 minutes. Repeat 2-3 more times until you get the consistency of ice crystals.
Spoon the mixture into cups. Using the tip of a paring knife gently remove a piece of the edible gold leaf and place on the granita. It might take you a couple times to figure out how to work with the gold leaf but you’ll get it!
Tip: fill the granita cups with ¼” water and freeze before adding the granita mixture. This will help keep the granita from melting.
