1 cocktail loaf of Rye or thinly sliced baguette pieces
½ pound thinly sliced Corned Beef
¼ pound thinly sliced Swiss Cheese
1 package of Coleslaw Mix or substitute with a 16 oz. jar of Sauerkraut (drained)
½ cup of Thousand Island Dressing
2 tablespoons of Balsamic Vinegar
½ teaspoon salt
Jar of Sweet Pickles or Small Dill Pickles
Preheat oven to 400 degrees.
Place bread slices on a greased cookie sheet and top with small slice of corned beef, and a small piece of swiss cheese. Bake for 8 minutes or until cheese has melted.
In a small bowl combine coleslaw mix with vinegar and salt.
Once the appetizer is removed from the oven and cooled place a small amount of coleslaw on top. Then drizzle with dressing and top with a pickle for garnish. Use a toothpick to hold ingredients together.
