Reuben

Ingredients

  • 1 cocktail loaf of Rye or thinly sliced baguette pieces
  • ½ pound thinly sliced Corned Beef
  • ¼ pound thinly sliced Swiss Cheese
  • 1 package of Coleslaw Mix or substitute with a 16 oz. jar of Sauerkraut (drained)
  • ½ cup of Thousand Island Dressing
  • 2 tablespoons of Balsamic Vinegar
  • ½ teaspoon salt
  • Jar of Sweet Pickles or Small Dill Pickles

Directions

  1. Preheat oven to 400 degrees.
  2. Place bread slices on a greased cookie sheet and top with small slice of corned beef, and a small piece of swiss cheese. Bake for 8 minutes or until cheese has melted.
  3. In a small bowl combine coleslaw mix with vinegar and salt.
  4. Once the appetizer is removed from the oven and cooled place a small amount of coleslaw on top. Then drizzle with dressing and top with a pickle for garnish. Use a toothpick to hold ingredients together.
