Pour a teaspoon of white vinegar over each fillet and rinse under very cold water. Pat dry with paper towels and arrange the fillets in a shallow baking dish.
Make the marinade: Mix together the olive oil, lemon juice, lime juice, Tabasco, maple syrup, soy sauce, garlic cloves, salt, and pepper and pour it over the salmon. Let sit for at least 1 hour or up refrigerate for up to 24 hours.
Remove the salmon from the refrigerator at least 30 minutes before cooking. Turn on the broiler. Line a sheet pan with aluminum foil and spray the foil with nonstick cooking spray. (This will make cleanup much easier.)
Make the glaze: Mix together the soy sauce, garlic, lime zest, salt, and pepper.
Place the salmon on the sheet pan and season lightly with salt and pepper. Brush the glaze on the salmon liberally and broil for 5 to 7 minutes until the top has caramelized.
