Sweet Potato Pie

Ingredients

Crust

  • 13 graham crackers (about 2½ cups)
  • 9 tablespoons butter, melted
  • ⅔ cups granulated sugar

Filling

  • 3 cups mashed, cooked sweet potatoes, canned
  • 3 large eggs, beaten lightly
  • ½ cups plus 2 tablespoons sour cream
  • 2 tablespoons fresh lemon juice
  • 1½ teaspoons ground ginger
  • 1 tsp cinnamon
  • 2½ tablespoons brown sugar

Directions

Crust

  1. Combine broken up crackers and sugar in food processor and process until smooth
  2. Put in a medium bowl, add melted butter and combine
  3. Put into pie plate
  4. First create the edges of the crust and then the bottom of the crust
  5. Put in a 350 oven and bake 10-15 minutes
  6. Let cool completely

Filling

  1. Preheat oven to 300
  2. In a food processor, blend all the filling ingredients together and process until smooth; be sure the filling has a very smooth consistency
  3. Pour into the cooled crust
  4. Put pie on middle rack of oven
  5. Bake for 1 hour or until top starts to crack and looks dry
  6. Let cool completely before serving
  7. Serve with whipped cream
