Smashed Potatoes

Serves 10


  • 15-20 new red potatoes, chopped with skin on
  • 1 stick unsalted butter 8 tablespoons)
  • ¾ cup heavy cream, heated
  • ½ cup sour cream
  • Salt and pepper to taste


  1. Place the potatoes in a large saucepan, add water to cover and heat to boiling; make sure you salt the water to add flavor to the potatoes
  2. Reduce the heat and simmer until the potatoes are fork tender
  3. Meanwhile, over low heat, place the cream and butter in a saucepan and heat until the butter
    melts, about 5 minutes
  4. Drain the potatoes and place in a large bowl
  5. Using a potato masher, smash the potatoes together with the butter and cream
  6. Add the sour cream and salt and pepper and blend into the potatoes
  7. Continue to smash potatoes to your preference to your preferred consistency


  • It is a good idea to heat the cream and butter and then add it to the potatoes because adding cold ingredients lowers the temperature of the potatoes
